01/05/2005 03:28 AMIn the aftermath of the tsunamis that devastated Asia in late December
2004, observers pointed out that lack of official, credible
information gave victims and governments in the area little prior
warning of the impending disaster. Although still in the developmental
stages, a partnership of the Global Disaster Information Network
(GDIN) and the Organsation for Economic Cooperation and Development
(OECD) is creating an information system that may significantly reduce
the impact of future natural and manmade disasters. Native American
Pueblo and Navajo Nations in Arizona, New Mexico, Utah and Colorado

presenting a chapter on how to BYO kitchen PC. If we had a kitchen PC,
it would include a special cookie dough dispenser, a urinal trough for
long cooking marathons, and a full-time chef.
They even add on a special bar-code reader so you can keep a
kitchen inventory.

This is
god-damn gorgeous. The KT401 Tape Timer is an aluminum kitchen timer.
If you can't figure out how to use it, that's between you and your
case worker. The site Kikkerland is only offering them in sets of six,
but I bet you could find them elsewhere.

Sharp has announced a pair of kitchen composters,
the NP-40CX-S and the NP-20CX-S, both of which use a special microbe
blend to reduce the volume of organic waste by up to 92% in just 24
hours. There's not much difference between the two units beyond
capacity (and wheels, I guess), and Sharp claims that the "Composting
Bio Mix" will only have need to be replaced about twice a year.
I don't know if Sharp plans to release these units outside of
Japan, but I would love to play around with one if they do. It would
be especially nifty if you could use the rendered waste as mulch or
something like that. Until then, I guess we'll just have to do it the
New York way - letting our plants die and then buying some more.

09/14/2004 12:46 PMOne of my first tasks last night was prepping the shrimp for a dish we
do called "Javanese Fried Rice." Around the kitchen though, everyone
refers to it as, "Javi." I mixed the shrimp in the marinade, and then
Ben told me to cover it, label it, and put it in the walk-in. With my
black marker I wrote, "Java Shrimp, 9/13."
Later in the evening, as dessert orders were coming in, a ticket
printed out that said:
Single scoop!Toffee chips
Erin grabbed the toffee chips off the shelf and handed them to me to
put on the scoop of vanilla ice cream. It took me more than a moment
to realize that what I'd read wasn't "bang Toffee chips" (geek speak
for "no toffee chips") but rather a request to add toffee chips to a
dish that didn't usually come with them.
I have a lot to learn. Or maybe it's unlearn.

09/26/2004 01:10 AMBecause I am a silly wacko, and because I know I can't possibly write
everything about cooking and work all in one post, I will share this
simple goofy story with you: One of the desserts we offer is plated
with a squiggle of passion fruit sauce (prehaps a coulis? I am not
sure. But it's on a squirt bottle and you make a zig-zag on the plate
with it). The other day it ran out, and I had to refill two squirt
bottles with new sauce. Since everything in the kitchen is labeled
with masking tape, it was up to me as the refiller to label the new
bottles. Others wrote "passion fruit" or "pas. fruit." I labeled my
new bottles, "The Passion of the Fruit." It was my special kitchen
homage to Mel Gibson and JC all in one.
