From geek to chef

From geek to chef 09/14/2004 12:46 PM
This past May, when I decided to go on sabbatical I wrote that I needed a break because: I had no perspective on anything, I was so deep into my world of weblogs and tech that I didn't have much sense of what was going on outside of my geek circles... I've been burning my candle at both ends for years now, and decided it was time to stop. Emotionally I was drained. Physically I was drained. But that wasn't the full truth of it, because there was something I'd been feeling that I wasn't quite able to admit. It's taken me several months of time away from computers and tech and geeks to accept the fact that computers and technology are not my passion. My interest in the web and tech was always more about people. With weblogs, it was making it possible for everyone to write online and share and communicate. And while I was doing it, I really did care very deeply about my work -- the products we were creating, the people for whom they were built, and the people who worked with me to build them. As my career progressed, I pushed myself to be more visible as a technology speaker, dabbled at freelance writing, and started another tech company. But something was always missing, and I've realized that was true passion for what I was doing. So last night I ended my sabbatical and began my new career doing something I've always felt passionate about: cooking. I'm working in the kitchen of a restaurant called Fifty-Six Union (mentioned at the bottom of thisFeasting on Nantucket article) here on Nantucket. Yesterday at 3 PM I put on my black chef's clogs, my black pants and white t-shirt, pulled my Red Sox cap over my hair and got to work peeling and deveining shrimp. Seven hours later, sweatily scrubbing the kitchen floors, I was still smiling. I've learned a lot this summer during my sabbatical but it all can be summarized in three words: follow your heart.

Web programming is probably why you’re reading this book. It’s why the first version of PHP was written and what continues to make it so popular today. PHP makes it easy to write dynamic web programs that do almost anything. Other chapters cover various PHP capabilities, like graphics, regular expressions, database access, and file I/O. These capabilities are all part of web programming, but this chapter focuses on some web-specific concepts and organizational topics that will make your web programming stronger.

Thomas Keller and Per Se

Thomas Keller and Per Se 05/17/2004 02:42 PM

Big article in New York about my favorite chef Thomas Keller and his new restaurant in New York City, The Perfectionist Gets Burned: How Thomas Keller survived the fire that almost took down Per Se.

"Just the other day, Thomas was so proud to show me how they use painter's tape in the kitchen," [The French Laundry Cookbook co-author Michael] Ruhlman says, visiting the Per Se kitchen one afternoon. Instead of tearing the tape from the roll to, say, label the plastic deli cups that hold the ingredients at each mise en place, every strip of tape at Per Se is cut with scissors, every edge perfectly straight. Immaculate. "Because it's all one thing to Thomas. You can't be lax in one area and perfect in another.

"It's not about the sweeping vision," Ruhlman adds. "It's about the minute vision. There are no big decisions. A great restaurant is the result of a thousand little decisions. A place like this is just composed of details. It's a pointillist picture. So every night after service, you'll see Thomas down on his knees, scrubbing out the cupboards."

Ah, that sounds like the Thomas Keller who charmed me as I read Michael Rhulman's wonderful book, The Soul of a Chef: The Journey Toward Perfection. I love the minute vision, the focus on the thousand little decisions, making sure each one is as right as it can be. Of course, such perfectionism is exhausting, but I think that's just how I'm made. And reading this makes me want to take back what I said the other day about not wanting to eat at Per Se. Maybe I do after all...

Keller on cooking and success

Keller on cooking and success 12/19/2004 03:21 PM
There's a great interview with my hero Thomas Keller at Epicurious.com. In particular, his musings on passion and community echo my feelings and experience with food. (Interview questions in bold): One of the great things about bistros, and not just about bistros but about cooking and dining in general, is the sense of community. Do you feel that? It's a real social interaction, whether you're cooking or whether you're eating. You have to feel comfortable in your environment. In the restaurant, we enjoy doing what we're doing together. That's really one of the wonderful things about being in a kitchen environment where there's a common vision and a common goal and a common respect for what you're doing. It's like nothing else, it really is.And that passion translates to the food? You have to be emotionally attached. I cook because it fulfills something inside of me, satisfaction, gratitude, making somebody happy. It's all wrapped up in those emotions, and eating should be the same. I understand in modern society we can't always be emotionally connected to what we're eating and what we're doing, but there are those moments when we have to sit back and appreciate it and say, "Okay, this is that moment where I'm just going to relax and have this event." At the end, Keller closes with one of the best things I've ever heard: "I think one of the true meanings of success is creating a memory for somebody." Also included are menus, a cooking demo by Keller, and a video tour behind the scenes at Per Se all accessible from this page. I really need to start saving for a Per Se visit.

Nantucket-Fi

Nantucket-Fi 08/04/2004 09:49 AM
Please don't try to escape your busy lives by visiting an island miles off-shore: Call me Tropos. Some years ago--never mind how long precisely--having little or no Internet access, and nothing particular to interest me on my Blackberry, I thought I would surf about a little and see the watery part of the world wide web. It is a way I have of driving off the spam and regulating my network traffic. Whenever I find myself growing grim about the mouth; whenever it is a damp, drizzly November in my soul; whenever I find myself involuntarily pausing before coffin warehouses, and bringing up the rear of every funeral I meet; and especially whenever my hypos get such an upper hand of me, that it requires a strong moral principle to prevent me from deliberately stepping into the street, and methodically knocking people's hats off--then, I account it high time to surf the Web as soon as I can. This is my substitute for pistol and ball. With a philosophical flourish Cato throws himself upon his sword; I quietly take to the Internet. There is nothing surprising in this. If they but knew it, almost all men in their degree, some time or other, cherish very nearly the same feelings towards Tim Berners-Lee with me. Apologies to my dear Mr. Melville. A Nantucket startup plans to install Tropos equipment and use Airpath's back-end to offer service across 800 acres on the island and out to marinas and surrounding waters. The plan requires public approval because of certain aspects of occupying space. Since the FCC recently ruled that only it can oversee unlicensed spectrum, I have to assume that Wi-Fi Blast, the WISP, needs access to poles or public property. (If not, they should read that FCC decision.) The article includes a great baseline number: a resort on the island installed Wi-Fi last year at its properties and grossed $16,000 so far this year at $10 a day and $60 per month. About 50,000 people visit Nantucket in its busy summer season. Pricing hasn't yet been set. Roaming with other Airpath locations is part of the deal, too. The arrival of widespread WiFi access on the playground of beautiful people and billionaires would mark a watershed in commercial WiFi technology. Hardly....

It'll go over well in Nantucket...

A new Nantucket perennial garden

A new Nantucket perennial garden 06/09/2004 12:25 PM
One of the things I did while on Nantucket was plant a new perennial garden along the edge of the lawn. My Nantucket Perennial Garden gets lots of sun, so I picked plants that would thrive with sun. I also selected plants that were relatively tough, since the soil is sandy and during the summer it can get pretty dry. It took about three days of work to get the garden completed, and my mom helped me get all the plants into the ground. It was lots of fun, and if I had more money to buy plants, I'd keep extend the garden along the rest of that edge of the lawn. For now, what's there will suffice. And who knew I could make a stone wall? Not me.

Rogue Nantucket WiFi cop embroiders the

Cory Doctorow: Remember when Reverend AKMA got told off for "theft of services" when he used the Nantucket Atheaneum's open WiFi from a bench out front, by a copper who invented a fictituous Federal regulation forbidding same? Well now the Nantucket paper has run a story in which the cop has embroidered the incident to make it all seem so very very very sinister indeed.
After I first read the story, I was amused, and put it aside to blog here. In transcribing the story for this entry, though, I'm struck by the odd inconcinnity of this account with my own experience. The Deputy Chief's story sounds very little like what happened to me.

* The mysterious "tapper" was leaning against the rear of the Atheneum; I was sitting on a public benchbeside the Atheneum.

* The newspaper story says that this incident gave rise to a "rumor" that "the police considered outdoor users. . . to be engaged in a theft of services," but in fact that's exactly what the officer who rousted me told me.

* The story says that this took place "a month ago," but if the article was published last week (when the weekly paper would have had to go to press in order for it to get to my mom, who then clipped it and mailed it to me), the incident couldn't have taken place longer ago than two weeks, give or take a day.
