Okay, so Nokia just dropped three phones onto us,
and they're pretty crazy, and by 'crazy' I mean 'sort of ugly.' I have
to cop to sort of liking the Tron-style and the asymetrical design -
the one round corner, one square corner 'new Nokia' look - but I have
a feeling I'll be in the minority. Would it kill them to just release
a nice, silver phone that you could take home to mom?
Anyway, here's the breakdown, and I'll probably go after this post
in a couple of waves. The one pictured here is the Nokia 7280, which
you might notice doesn't have a keypad. That's because Nokia designed
it to be "sleek," "sexy," and "edgy." (I'm not joking.)

And last but not least (if you're reading from the
bottom up; otherwise, welcome to the Nokia posts!) are these two new
peripherals from Nokia, a new Nokia Wireless Headset HS-11W headset
with a 6 hour talk time, and this Nokia Wireless GPS Module LD-1W that
also connects to your phone or PDA via Bluetooth (the GPS may not
actually be new - it seems sort of familiar - but I don't exactly
recall hearing about it before). The GPS unit uses the same battery
and charge plug as most Nokia phones, so you can use your existing
charge to go along with it.
The headset should be out later this year, while the GPS unit isn't
scheduled until Q1 2005.

It's fun to use google and see what it returns when searching for
'sticky buns' as, well, the imagination is a poor substitute for
reality. When food and skin porn collide it gets fairly ugly pretty
quickly. Sticky buns are likely the source of inspiration for the
Finnish bostonkakku which are served like a pie rather than the
individual buns. One of the guys at work quipped that it is served
this way because you can feed 20 instead of 8 people.
I figured that since I was making dallaspulla that I'd make the
inspiration for texaspulla and bostonkakku so that my test subjects
would know just what they had been missing all these years. :) The
dough is a snap to make even without a mixer and is much easier to
work with than the pulla dough. The only drawback is the time spent
waiting for the dough to rise. With a four-day weekend approaching
where absolutely nothing will be open and we'll likely have crappy
weather given that it's a holiday, what could be better than making a
pan of sticky buns and eating them instead of chocolate eggs? These
are, by far, the best cinnamon rolls I've ever made and my test
subjects consumed them in a shark chum feeding frenzy. Two guys even
asked me for the recipe.
Sticky Buns, a.k.a. caramel rolls or cinnamon rolls
Makes: 12 sticky buns
Time: ~30 minutes prep, 3 hours for dough rising

This recipe has four components: the dough that is shaped into buns,
the filling that creates the swirl in the shaped buns, the caramel
glaze that bakes in the bottom of the baking dish along with the buns,
and the pecan topping that garnishes the buns once baked. Although the
ingredient list may look long, note that many ingredients are
repeated. Leftover sticky buns can be wrapped in foil or plastic wrap
and refrigerated for up to 3 days, but they should be warmed through
before serving. They reheat quickly in a microwave oven (for 2 buns,
about 2 minutes at 50 percent power works well); they can also be put
into a 325F/175C-degree oven for about 8 minutes.
Dough
-
3 large eggs at room temperature
-
3/4 cup buttermilk (2 dl piima) at room temperature
-
1/4 cup (.5 dl) granulated sugar
-
1 1/4 teaspoons table salt
-
2 1/4 teaspoons instant yeast (1 packet sunnuntai dry yeast)
-
4 1/4 cups (10,5 dl) unbleached all-purpose flour, plus additional
for dusting work surface
-
6 tablespoons (85g) unsalted butter, melted and cooled until warm
-
In bowl of standing mixer, whisk eggs; add buttermilk and whisk to
combine.
-
Whisk in sugar, salt, and yeast.
-
Add about 2 cups (5 dl) flour and butter; stir with wooden spoon or
rubber spatula until evenly moistened and combined.
-
Add all but about 1/4 cup (1/2 dl) remaining flour and knead with
dough hook at low speed 5 minutes.
-
Check consistency of dough (dough should feel soft and moist but
should not be wet and sticky; add more flour, if necessary); knead at
low speed 5 minutes longer (dough should clear sides of bowl but stick
to bottom).
-
Turn dough out onto lightly floured work surface; knead by hand
about 1 minute to ensure that dough is uniform (dough should not stick
to work surface during hand kneading; if it does stick, knead in
additional flour 1 tablespoon at a time).
-
Lightly spray large bowl or plastic container with nonstick cooking
spray. Transfer dough to bowl, spray dough lightly with cooking spray,
then cover bowl tightly with plastic wrap.

Set in warm, draftfree spot until doubled in volume, 2 to 2 1/2
hours.
Caramel Glaze
-
6 tablespoons or 85g unsalted butter
-
3/4 cup (1,75 dl) light brown sugar, packed
-
3 tablespoons corn syrup, light or dark
-
2 tablespoons heavy cream
-
1 pinch table salt
-
Meanwhile, combine all ingredients for glaze in small saucepan.
-
Cook over medium heat, whisking occasionally, until butter is
melted and mixture is thoroughly combined.
-
Pour mixture into nonstick metal 13- by 9-inch (33cm x 23cm) baking
dish.
-
Using rubber spatula, spread mixture to cover surface of baking
dish.
-
Set baking dish aside.
Cinnamon-Sugar Filling
-
3/4 cup (1,75 dl) light brown sugar, packed
-
2 teaspoons ground cinnamon
-
1/4 teaspoon ground cloves
-
1 pinch table salt
-
1 tablespoon or 15g unsalted butter, melted
-
Raisins (optional)
-
Combine brown sugar, cinnamon, cloves, and salt in small bowl.
-
Mix with a fork until thoroughly combined, using fingers to break
up sugar lumps.
-
Set aside.
To assemble and bake buns:
-
Turn dough out onto lightly floured work surface.
-
Gently shape dough into rough rectangle with long side nearest you.
-
Lightly flour dough and roll to 16-inch x 12-inch (40cm x 30cm)
rectangle.
-
Brush dough with 1 tablespoon melted butter, leaving 1/2-inch
border along top edge; with butter remaining on brush, brush sides of
baking dish.
-
Sprinkle filling mixture over dough, leaving 3/4-inch border along
top edge; smooth filling in even layer with your hand, then gently
press mixture into dough to adhere. Add rasins if you desire.
-
Beginning with long edge nearest you, roll dough into taut
cylinder.
-
Firmly pinch seam to seal and roll cylinder seam-side down.
-
Very gently stretch to cylinder of even diameter and 18-inch (45
cm) length; push ends in to create even thickness.
-
Using a serrated knife and gentle sawing motion, slice cylinder in
half, then slice each half in half again to create evenly sized
quarters.
-
Slice each quarter evenly into thirds, yielding 12 ~1.5 inch (3,75
cm) buns (end pieces may be slightly smaller).
-
Arrange buns cut-side down in prepared baking dish.
-
Cover tightly with plastic wrap and set in warm, draft-free spot
until puffy and pressed against one another, about 1 hour.
-
Meanwhile, adjust oven rack to lowest position, place pizza stone
(if using) on rack, and heat oven to 350F/175C degrees.
-
Place baking pan on pizza stone; bake until golden brown and center
of dough registers about 180F/82C degrees on instant-read thermometer,
25 to 30 minutes.
-
Cool on wire rack 10 minutes; invert onto rimmed baking sheet,
large rectangular platter, or cutting board.
-
With rubber spatula, scrape any glaze remaining in baking pan onto
buns; let cool while making pecan topping.
Pecan Topping
-
3 tablespoons or 50g unsalted butter
-
1/4 cup (.5 dl) light brown sugar, packed
-
3 tablespoons corn syrup, light or dark
-
1 pinch table salt
-
1 teaspoon vanilla extract or vanilla sugar
-
3/4 cup (1,75 dl) pecans or walnuts, toasted in a skillet over
medium heat until fragrant and browned, about 5 minutes, then cooled
and coarsely chopped
-
Combine butter, brown sugar, corn syrup, and salt in small saucepan
and bring to simmer over medium heat, whisking occasionally to
thoroughly combine.
-
Off heat, stir in vanilla and pecans until pecans are evenly
coated.
-
Using soup spoon, pour heaping tablespoon of nuts and topping over
center of each sticky bun.
-
Continue to cool until sticky buns are warm, 15 to 20 minutes.
-
Pull apart or use knife to cut apart sticky buns; serve.

Nokia announced their 1600 and 1110
models, meant to be affordable, easy-to-use and light on frills. Nokia
is targeting developing nations with these models and they look well
enough to suit their purpose as part of a plan to eventually offer
mobile service for just $5 a month. They both feature talk times of
over 5 hours and the Nokia 1600 has a 65k color screen while the Nokia
1110 uses a sunlight-friendly inverted black and white display.
They're expected to retail for $105 and $85, respectively, and will be
available later this year.

Last year, Helsinki lost a stately old willow tree in a freak storm. The city

the King was good but it didn't complement the movie as well as
the previous 2 extended editions had. I think there should be some
sort of medal that one should receive for managing to make it through
all 3 DVDs within an 18-hour period of time. I went to sleep with the
visage of Gollum speaking like Yoda, maybe because the last time I sat
through a trilogy in one sitting was Star Wars which also had a
short, green creature with a raspy voice. "My pressssious you are!"
I was leafing through Deko, a new magazine that is mostly just
pictures and design voyeurism that I suspect won't last very long,
when I saw a little blurb about giving a fairly useless object d'art,
a mini Alvar Aalto dish in the
famous lake shape, a purpose by using it as a cookie cutter. I
decided to give it a try and my analysis is that it is the most ineffective 15 euro
cookie cutter anyone could ever purchase since the glass edges are
far too thick which renders it unable to make a clean cut no matter
how thick or thin the dough is. It would be much easier if someone
just made a 2 euro cookie cutter in the same shape. Maybe use the dish
as a cheese dip mold....perhaps there should be a contest to discover
an actual useful purpose for these little tourist trinkets. :)

how quickly that flag will be abused: don't like a song? call it
child porn). Finally, in a move that's much more about the good
publicity it can generate than actually catching pornographers,
they're going to start posting pictures from the FBI's most wanted
list of child pornographers on their websites.

wealthy backers that the real problem with P2P file sharing systems
was that porn was available, we wondered how that was

different from the internet. There's lots of porn on the
internet, but politicians aren't running around saying that we need to
shut it down. But, because of some misleading statements by the
entertainment industry, politicians are freaking out about the file
sharing networks. If they do try to do something to shut them down,
of course, the porn will just move elsewhere where it will be harder
to shut it down. In fact, the porn already is elsewhere - as it has
been all along. The U.S. General Accounting Office (GAO) is telling
Senator Hatch that
P2P porn is
no worse than what's already available on the web. Hatch's
original statement was based on a GAO report, but they're now saying
that wasn't based on a comprehensive study, but tips that were sent in
to the National Center for Missing and Exploited Children. Only about
1.4% of those tips concerned P2P networks.

GamesIndustry.biz is running a story where a Sony exec calls
the recently-announced GLAY'z PSP Porn
"utterly undesirable," going on to claim that they are powerless to
stop its production. So who then, if not Sony, is making the PSP UMD
discs the Japanese porn will be printed on? I was under the impression
that part of the reason for using UMD in the PSP was that Sony would
be able to control the manufacturing, and thusly get a cut from every
disc pressed (a la Nintendo and its cartridges). If that's not
the case, who is pressing the discs, and what prevents them from

Nokia rarely announces just one product at a time,
and today was no exception. In addition to that Remote Camera, they
also have revealed the Nokia 6670, a tri-band phone (in both US and
Everybody Else tunings), that looks a lot like a 7610 without the
strange keypad and the gussied up case. Instead the 6670 is a fairly
plain looking model - although appealing, in its way, as long as you
don't mind the New Era Nokia asymmetric styling - that runs Series 60
and has a one-megapixel camera.
Nokia's plan is all starting to make a lot more sense to me now.
Release the eye-catching, weirdo phones first, then release a follow
up model that people with actually buy. I don't understand why
that's their plan, but that seems to be it.

Paul Boutin has a nice write up of the Nokia 6600
over at Slate, putting that relatively staid phone up against the Treo
650 and explaining why the generally less-impressive Nokia might be a
better choice for many. It all boils down to the beauty of Series 60,
to me. Nokia may be a heartless ice queen running down freedom on her
iron, lawyer-pulled sleigh, but she makes an amazingly polished
operating system for phones. It's not as PC-like as Palm or Windows
Mobile, but it puts the phone functions first, instead of hidden
behind layers of intelligent abstraction. That's worth a
lot—especially when the phones are essentially free.
Plus there's still plenty of whiz-bang to be had from a Series 60
phone. People still marvel that I can get to a terminal on a Nokia
3650 and that phone is like two years old. (Thanks, John!)

Generally I prefer separate devices. I really like the Palm Tungsten
T3 (review) and find it a very capable tool. But there are times when
I just want my schedule and contacts with me, and don't need to work
on Office documents on the go, and the Nokia 6600 has quickly become
my handset of choice.

enabling users to post to leading blog platforms. The application
was developed by Futurice, who

products, today announced that it is in mass production of high
capacity dual voltage RS-MMC (DV RS-MMC). The dual voltage (DV)
feature allows for compatibility with devices running on the
conventional 3.0V as well as with the dual voltage 3.0/1.8V devices.
The low voltage feature translates to much lower power consumption,
meaning longer battery life for both today and tomorrow’s mobile
digital devices. Card capacities of 128MB and 256MB are available

I didn't really want to see that new movie "Cellular"
before, but after hearing that it's about "getting [viewers] to
identify with the frustrations of the police officer as he attempts to
track down and rescue Ms. Basinger" using a crappy Nokia cellphone, I
sort of started thinking that was maybe a little too close to real
life to want to have to experience vicariously. The portrayal of
cellular service - including the customer service - is apparently so
awful in the movie that none of the American carriers approached
allowed their service to be used in the film. I wonder if Kim Basinger
sort of freaks out in the movie and twitches a lot like she does in
real life? I would maybe pay to watch that.
